What it is
The plant physiologists Kidd and West found that lowering oxygen and raising carbon dioxide in a cold chamber slows apple respiration and extends storage considerably. It is the basis of off-season fruit storage.
Kidd and West's work at the Low Temperature Research Station (Cambridge) began around 1918-1920; commercial application spread in the 1930s. The date is approximate.
What it led to
- fresh fruit available all year
- commercial controlled-atmosphere chambers (1930s)
- maritime fruit shipping in controlled containers
