What it is
Henry Ginaca, an engineer at James Dole's Hawaiian Pineapple Company, devised a machine that peeled and cored pineapples in a single operation, at about 35 per minute. It industrialised canning and made Hawaii the world's largest producer of canned pineapple.
The machine was installed at the Honolulu cannery in 1913; it is mentioned among the innovations that gave Dole market dominance for decades.
What it led to
- a canned pineapple industry, with thousands of employees in Hawaii
- cheaper canned pineapple worldwide
- a model of mechanised fruit processing on a production line
