What was discovered
A preventive system that identifies the points in a process where a biological, chemical or physical hazard can be controlled, instead of inspecting only the end product. It was developed to guarantee safe food for astronauts.
Development began in 1959-1960 (Pillsbury, NASA, Natick); it was presented publicly at the 1971 National Conference on Food Protection. Codex adopted it in 1993.
What it led to
- mandatory food safety standards (US, EU)
- Codex Alimentarius and ISO 22000 standards
- traceability and self-inspection in the food industry
