What it is
An analytical technique that determines a sample's organic and ammoniacal nitrogen by digesting it with sulfuric acid, from which protein content is indirectly estimated. Developed at the Carlsberg Laboratory, it remains a reference method in analytical chemistry and food control.
Developed by Danish chemist Johan Kjeldahl at the Carlsberg Laboratory in 1883.
What it led to
- protein quality control in food and animal feed
- international standardisation of nitrogen analysis
- derived automated digestion and distillation methods
