What it is
A square sponge cake dipped in chocolate and rolled in desiccated coconut, associated with Lord Lamington, governor of Queensland. It is an Australian cake that recycles dry sponge and has become a symbol of charity bake sales.
The first recipe found (Queensland Country Life) dates from 1900; it does not say who created it or why it is so named, and several anecdotes about the governor's cook or a kitchen accident circulate, without proof. The recipe appears in Sydney in 1901 and in New Zealand in 1902.
What it led to
- a national cake of Australia, with its own day on 21 July
- use of the previous day's sponge
- variants with jam and cream
