What it is

A plant-protein burger that contains soy leghaemoglobin, produced by engineered yeast, whose heme group gives meat flavour and colour. It reached the market in 2016.

Founded in 2011 by the biochemist Patrick Brown; the recombinant heme received FDA approval as an ingredient in 2018 after debate.

What it led to

  • second-generation plant-based meats (Beyond Meat)
  • precision fermentation in food
  • regulatory debate on genetically engineered ingredients
